Like…does it get any better?! Well, yes it does. Because they’re BITE SIZED. I mean, do you even see the perfect cinnamon-y crunchy coating on these French toast bites? I literally can’t even.

If you’re in need for the perfect Holiday appetizer, look no further because I’ve got you covered with these slightly spicy, super creamy Chorizo, Spinach, and Artichoke Stuffed Mushrooms. I mean, who doesn’t love anything stuffed with spinach and artichoke dip?! Add chorizo to the mix and you’ve got a full blown party happening right in your mouth. And guess what? The combination of flavors isn’t even the best part about this recipe. The best part is that these little, poppable morsels of heaven are easy to make, come together in under an hour, gluten free with the adjustment of just one ingredient, AND can be prepared a day ahead…so all you have to do the day of is stick ’em in the oven, set it, and forget it. One more dish you can cross off your list, giving you more time to drink all the bubbly and not stress about food (remind me to tell you guys about the time I royally f***ed up Thanksgiving dinner).

Ok, I know what you’re thinking. Chorizo? Pumpkin? Chili?! I thought the same thing, too until I tried it and let me tell you … this might be the best chili I’ve ever had. And that’s saying a lot, because as you all know, I am a soup connoisseur. From Vegan Albondigas to Chick’n & Dumpling Soup, you know I love my fair share of soups! Initially, I didn’t think Chorizo and Pumpkin would pair well with chili, but something about these combination of flavors (along with a few other ingredients) just hits different, if ya know what I mean?! Vegan Bruschetta Chickn Pasta with Balsamic Cream Sauce

Fun Fact : Bruschetta is my favorite appetizer of. all. time. Whenever there’s a potluck or a get-together, my go-to dish is this Pea Pesto Bruschetta. It’s so flavorful, fresh, light, and out of this world good – my friends and family can attest to this!

Fun Fact #2 : Ya’ll should know this already, but pasta is my favorite food of all time. Like, I can eat a ridiculous amount of noods and not get full. I am the human pasta/noodle garage disposal, and I have no shame in admitting this. I love them so, so, sooo much (example A, B, and C).

I have no idea why the thought of combining these two dishes hasn’t crossed my mind much sooner. I mean…instead of putting bruschetta mix on bread, why not toss it in pasta with balsamic cream sauce?! Duh, Ashley.

I guess that saying is true, though. Good things do come to those who wait, because this Vegan Bruschetta Chickn Pasta is the best thing that’s happened to my taste buds in a long time!
