Even before I was vegan, I always loved the idea of having a vegan entree option at all our Holiday dinners, and this mushroom pot pie is the perfect addition to your menu! It’s rich and decadent, yet very easy to prepare and cost-effective, too — so it’s not really cutting into your time or your holiday budget! I’ve also found this mushroom pot pie is one of those dishes that everyone loves, whether they’re vegan or not! It’s that good!

Vegan Chick’n Flautas Ahogadas

Hello, Friends!!!

It has been way too long since I’ve posted a recipe to the blog, but as promised, we are back to our regular weekly postings, and I am so excited to finish this year off with all the recipes you’ve been asking for!

First up, my version of vegan flautas ahogadas. Ya’ll have been patiently waiting for this and I am so excited to finally be posting it!

As many of you know, my wife Ashlee and I live in a city that is deeply rooted in Hispanic culture and cuisine, so this recipe is especially dear to us. While my version of Flautas is not necessarily “traditional”, it’s an ode to my love of Mexican cuisine, and a fun twist on the classic recipe – like my vegan tortilla soup and vegan elotes!

Vegan Bruschetta Chickn Pasta with Balsamic Cream Sauce

Fun Fact : Bruschetta is my favorite appetizer of. all. time. Whenever there’s a potluck or a get-together, my go-to dish is this Pea Pesto Bruschetta. It’s so flavorful, fresh, light, and out of this world good – my friends and family can attest to this!

Fun Fact #2 : Ya’ll should know this already, but pasta is my favorite food of all time. Like, I can eat a ridiculous amount of noods and not get full. I am the human pasta/noodle garage disposal, and I have no shame in admitting this. I love them so, so, sooo much (example A, B, and C).

I have no idea why the thought of combining these two dishes hasn’t crossed my mind much sooner. I mean…instead of putting bruschetta mix on bread, why not toss it in pasta with balsamic cream sauce?! Duh, Ashley.

I guess that saying is true, though. Good things do come to those who wait, because this Vegan Bruschetta Chickn Pasta is the best thing that’s happened to my taste buds in a long time!

Fettuccine with Green Olive & Caper Sauce, Blistered Tomatoes, and Lemony Breadcrumbs

You know those dishes that come together when you haven’t had time to grocery shop in weeks, and your produce is going bad, and the bread is going stale, and you just throw something together in hopes it turns out alright?

Well, this fettuccine with green olive & caper sauce, blistered tomatoes, and lemony garlic breadcrumbs is one of those dishes. Except it turned out more than alright; it turned out pretty fuckin’ fantastic.

Crisp and buttery olives pair especially well with capers, garlic, and cheese (vegan, of course). Throw in some noods and breadcrumbs for texture, and you’ve got a one-way ticket to Flavor Town, folks.

Vegan Shepherd’s Pie

Do you guys celebrate St. Patrick’s Day? Neither Ashlee or myself are of Irish descent, but we celebrate every year mainly for the food. In the past, before switching to a vegan diet, we would go all out. Corned beef and cabbage, bangers and mash, Guiness beef stew, and my personal favorite…Shepherd’s Pie.

Ashlee and I don’t generally like casseroles, but there’s something so satisfying and comforting about Shepherd’s Pie. Maybe it’s the rich, meaty stew-like filling or the fluffy mashed potato topping. Or both combined. To say I love this dish is an understatment.

Since St. Patrick’s Day is tomorrow, I figured there’s no better time to veganize this famous dish.

Grab a Guiness and let’s get to making some vegan shepherd’s pie, shall we?!

Cruelty Free Double Double Burgers – Animal Style [V]

Ahhhhh, the legendary Double Double burger from In-N-Out. If you’re from the West Coast, or even if you aren’t, I’m sure you’ve heard (and probably devoured several) of these glorious burgers from the famous fast food chain. God forbid if you don’t ask for animal style because that would be simply un-American!!! I don’t know what it is about these burgers that make them so addicting. Maybe it’s the perfectly caramelized onions, or that fucking secret sauce. The combination is nothing short of holy, in my opinion.
