Vegan Lumpia (Lumpiang Shanghai)

This vegan Lumpiang Shanghai is much like its original counterpart – spring roll wrappers are filled with seasoned vegan meat, carrots, onions, and garlic then rolled into cigar-shaped egg rolls. They’re then fried until golden and perfectly crisp. Serve with sweet & sour sauce and banana ketchup for an appetizer that everyone is sure to love!

Earlier this year, TasteAtlas ranked Lumpia (Lumping Shanghai), as the world’s second best street food — and for good reason! These cigar-shaped spring rolls are the perfect combination of crispy, savory, and salty goodness! Growing up, lumpia was served at every occasion and they were always the first to go. I remember watching my mom roll what seemed liked hundreds of lumpia for every celebration and gathering, and to be able to continue that tradition means so much to me! This year, we’ll be rolling them together for Thanksgiving and I can’t wait to make new traditions and memories! If you’re thinking about making something absolutely delicious (and slightly addicting) this holiday season, this is your sign to make this vegan lumpia! But this is also your warning, because once you make them, you will be asked to make them all the time!

If you’re in need for the perfect Holiday appetizer, look no further because I’ve got you covered with these slightly spicy, super creamy Chorizo, Spinach, and Artichoke Stuffed Mushrooms. I mean, who doesn’t love anything stuffed with spinach and artichoke dip?! Add chorizo to the mix and you’ve got a full blown party happening right in your mouth. And guess what? The combination of flavors isn’t even the best part about this recipe. The best part is that these little, poppable morsels of heaven are easy to make, come together in under an hour, gluten free with the adjustment of just one ingredient, AND can be prepared a day ahead…so all you have to do the day of is stick ’em in the oven, set it, and forget it. One more dish you can cross off your list, giving you more time to drink all the bubbly and not stress about food (remind me to tell you guys about the time I royally f***ed up Thanksgiving dinner).

Hello, Friends!!!

It has been way too long since I’ve posted a recipe to the blog, but as promised, we are back to our regular weekly postings, and I am so excited to finish this year off with all the recipes you’ve been asking for!

First up, my version of vegan flautas ahogadas. Ya’ll have been patiently waiting for this and I am so excited to finally be posting it!

As many of you know, my wife Ashlee and I live in a city that is deeply rooted in Hispanic culture and cuisine, so this recipe is especially dear to us. While my version of Flautas is not necessarily “traditional”, it’s an ode to my love of Mexican cuisine, and a fun twist on the classic recipe – like my vegan tortilla soup and vegan elotes!

Easy Vegan Pizza Rolls

You know those foods that are super reminscent of your past? Like, as soon as you smell said food, it immediately transports you back to a certain place and time?

That’s what Pizza Rolls do to me. Those little pepperoni and cheese filled dough bites were such a staple food item in my adolescent years. As soon as I smell them, memories with my sister immediately come flooding back to me. I know it sounds odd, but when we lived together, we bonded over a plate of Pizza Rolls and our favorite movie. The good ol’ days.

Vegan Butternut Squash Soup with Fried Sage Croutons

Happy January, friends!!! I hope everyone had a wonderful and safe Holiday season!

I don’t know about you guys, but I am going through some serious PCD (post Christmas depression). My entire immediate family was able to spend The Holidays together for the first time in years, so going back to “real life” after everyone left kinda sucked, but I am super excited to see what this new year has in store for us!

Besides ending the year with the people we love the most, we also ended 2017 with a vegan pop-up dinner at the same location we had our very first pop-up! It was the best pop-up we’ve had! Looking back, I still can’t believe how smooth it went.

Anyway, the first dish we served at our Holiday inspired pop up was vegan butternut squash soup with fried sage croutons and it was a huge hit! I figured since all of our guests loved it, you guys will too.

Let’s get to makin’ some soup!
