Vegan Lumpia (Lumpiang Shanghai)

November 18, 2022 By Ashley Leave a Comment

This vegan Lumpiang Shanghai is much like its original counterpart – spring roll wrappers are filled with seasoned vegan meat, carrots, onions, and garlic then rolled into cigar-shaped egg rolls. They’re then fried until golden and perfectly crisp. Serve with sweet & sour sauce and banana ketchup for an appetizer that everyone is sure to love!

Earlier this year, TasteAtlas ranked Lumpia (Lumping Shanghai), as the world’s second best street food — and for good reason! These cigar-shaped spring rolls are the perfect combination of crispy, savory, and salty goodness! Growing up, lumpia was served at every occasion and they were always the first to go. I remember watching my mom roll what seemed liked hundreds of lumpia for every celebration and gathering, and to be able to continue that tradition means so much to me! This year, we’ll be rolling them together for Thanksgiving and I can’t wait to make new traditions and memories! If you’re thinking about making something absolutely delicious (and slightly addicting) this holiday season, this is your sign to make this vegan lumpia! But this is also your warning, because once you make them, you will be asked to make them all the time!

Grab a drink and let’s make the best vegan lumpia!

Vegan Arroz Caldo

October 6, 2022 By Ashley Leave a Comment

This aromatic vegan Arroz Caldo – or Lugaw – is true comfort in a bowl! Growing up, my family always enjoyed this during the colder months, and on special occasions like Christmas and New Year’s Eve. With bold flavors of ginger and garlic, and a kick of spice and fresh lemon zest, you’ll find yourself craving this recipe whenever you’re in the mood for something warm and cozy.

Vegan Giniling (Filipino Picadillo)

September 29, 2022 By Ashley Leave a Comment

This vegan Giniling (also known as Filipino Picadillo), is a delicious one-skillet meal that’s easy to prepare and requires simple ingredients. Vegan ground sausage is simmered in a rich tomato sauce with hearty potatoes and vegetables until tender – make sure to serve over white rice for the ultimate comfort meal!

Vegan Filipino Picadillo

vegan giniling (aka filipino picadillo)

This vegan Giniling, also known as Filipino Picadillo, is the ultimate comfort food! It’s rich and savory, with the perfect balance of spicy, sweet, and tangy.

Picadillo comes from the Spanish word picar, meaning to mince or chop. It is a traditional dish in many Latin American countries and the Philippines. In the Philippines, picadillo is commonly made with ground beef or pork, potatoes, onions, and garlic, and cooked in a rich tomato sauce. Depending  on the region, different ingredients such as raisins, carrots, and olives are added. It can be either soupy or more dry. Usually, the drier version is called giniling.

Growing up, we always had the ingredients for giniling on hand – and there was always a pot of rice in the rice cooker – so this dish was prepared often as it was easy, minimal, and fairly quick to make.

I have so many fond memories of this dish and I’m so happy I’m still able to enjoy it vegan! Grab a drink and let’s get to cooking the best vegan giniling!

Vegan Bistek Tagalog (Filipino Beefsteak)

July 31, 2022 By Ashley Leave a Comment

This vegan Bistek Tagalog or Beefsteak is a delicious plant-based twist on the popular Filipino dish. (Imitation) beef is simmered with a generous amount of onions in savory soy sauce and zesty lemon juice, then cooked down until juicy and tender. Serve with rice for a delicious and hearty meal that everyone is sure to love!

bistek Tagalog (Filipino  Beefsteak)

Growing up, Bistek Tagalog, or Filipino Beefsteak was one of my favorite dishes! In my opinion, it’s very similar to Chick’n Adobo – it’s savory from the soy sauce, with a zesty kick from the fresh citrus (usually calamansi) juice. It’s so simple, but somehow so complex. Not only is it delicious, but the memories behind this dish are quite special … I mean, it’s basically my entire childhood! And to be honest, I never thought I’d be able to enjoy it again after switching to a vegan diet (thank goodness I was totally wrong!).

Dynamite Lumpia (Dinamita)

April 20, 2022 By Ashley Leave a Comment

If you’re looking for a fun and tasty snack, this Dynamite Lumpia (Dinamita) checks all the boxes! Green chilis are stuffed with a classic lumpia Shanghai filling, vegan cream cheese and cheddar shreds, then wrapped in lumpia wrappers and fried until golden, crispy, and melty! Talk about the perfect combination of salty, savory, creamy, crunchy and spicy!

This vegan dynamite lumpia is a variation of lumpia made with green chilies that are stuffed with a ground meat filling and cheese. The chilies are then wrapped in a lumpia wrapper with the stem exposed (so they look like cute lil dynamites), then fried until golden, crispy, and melty. It’s got all the savory, crunchy goodness of traditional Lumpia Shanghai, but kicked up a notch with the addition of slightly spicy chilies and 2 typed of creamy cheese – kinda like lumpia and jalapeño poppers met and had a baby.

Vegan Sisig

February 15, 2022 By Ashley Leave a Comment

This vegan sisig is my tasty take on the wildly popular Filipinx drinking snack! Dried snow fungus mushrooms are rehydrated and marinated, transforming them into crispy vegan ‘pork’ — then they’re sautéed with vegan sausage and an aromatic blend of onions peppers, chilis, & garlic, and cooked until crisped around the edges. Just like its traditional counterpart, this vegan sisig is rich and savory, with subtle notes of heat and acidity! The perfect bite paired with your favorite beer!

Vegan Sisig

It’s been awhile since I’ve been back to the Philippines (damn you, Covid!), but last time my wife and I were there (it’s been so long, it was before we were even vegan 😭), we spent the entire month island hopping and trying different variations of each region’s Sisig. To say we were obsessed is an understatement.

Since then, we’ve made many versions of our own vegan Sisig – some with mushrooms or tofu, or a mixture of both, but this version is my absolute favorite! The snow mushrooms provide the perfect gelatinous texture that you’d otherwise get from the different cuts of pork, while the vegan sausage crisps up impeccably! Eating this reminds me of drinking Red Horse and swimming into the late hours of the night while snacking on Sisig with my family and friends in the Philippines, and I’m immediately transported to my favorite place in the world with some of my favorite memories 🥲

Vegan Filipino Spaghetti

January 25, 2022 By Ashley Leave a Comment

Filipino spaghetti is a Filipino twist on classic Italian spaghetti. Sweet and savory meat sauce is tossed with spaghetti and topped with cheddar cheese, making for a delicious and creamy pasta dish that is truly unlike any other! Typically served during holidays and at birthday parties, this dish is beloved by much of the Philippines!

Filipino Spaghetti

Have you ever tried Filipino Spaghetti?

It’s a thing in the Philippines – served during the holidays, at birthday parties, and sold at all the fast food chains – including McDonald’s! Growing up in a Filipino household, I didn’t even know what real spaghetti was. I was always under the impression spaghetti was supposed to be sweet. I remember the first time I had non-filipino spaghetti, I was so confused. Where were the hot dogs? Why wasn’t it sweet? No cheddar cheese?!!!!?! To this day, I still prefer Filipino spaghetti to classic Italian spaghetti, and even when I cook spaghetti that’s more traditional,  I can’t help but add just a little bit of sugar to remind me of home 🙂

Unlike its original Italian counterpart, Filipino spaghetti is sweet, loaded with a meaty, sugary hotdog spaghetti sauce, then topped with cheddar cheese so it’s super creamy. It’s unique and unlike any pasta I’ve ever had! If you’re a sucker for sweet and savory dishes, you have to give Filipino Spaghetti a try!
