30-Minute Herby Meatballs with Creamy Kale Orzo

Okay, we’re in this weird in-between time after Thanksgiving and before Christmas that reminds me strangely of an episode of Black Mirror. Not in a bad way or anything … but in the sense that I have no idea what time of the day it is, I’m barely motivated (I just want to sit by the fire, watch cozy movies, and veg out all day 😉), and I can never decide on what I want to eat — which is so not like me 🥲

All that said, when I’m feelin’ too lazy to cook, but still want something fresh and homemade, I tend to make these 30-Minute Herby Meatballs with Creamy Kale Orzo! Happy first day of Fall! It’s ✨officially✨ the start of my Soup Season Series, and we’re kicking it off with the highly requested Zuppa Toscana.

This soup was made popular by Olive Garden, and is one of the most well-known items on their menu! Their version (and the one this recipe is based off of) is made with Italian sausage, crushed red peppers, diced onion, garlic, chicken broth, heavy cream, potatoes, and kale. It’s richer than the original, which is typically made with a lot more vegetables and water, instead of cream — basically far from any Zuppa Toscana you’d probably see in Tuscany. That said, because “Zuppa Toscana” is such a broad term, it’s hard to find its exact origins, and I’d bet that ingredients varied by region or what was available seasonally.

Vegan Sweet and Sour Tofu

This sweet and sour tofu is inspired by one of my favorite Chinese takeout dishes, Sweet and Sour Chicken. Sweet and sour dishes, sauces, and cooking methods have a long history in China. One of the earliest recordings of sweet and sour comes from《烧尾宴食单, a menu of the food served in Tang Dynasty festivals written in 708. It included many sweet and sour dishes and recorded that they were invented by Chancellor Wei Juyuan under Emperor Zhongzong of Tang when he hosted the Emperor at his house; one of them is the iconic Chinese dish sweet and sour spare ribs.

Cantonese sweet and sour sauce is the direct ancestor of the sauce of the same name in the West, and was originally developed for sweet and sour pork. The late renowned chef from Hong Kong, Leung King, included the following as his sweet and sour source sauce recipe: white rice vinegar, salt, Chinese brown candy, ketchup, Worcestershire sauce, and dark soy sauce.

Ever since I saw this video on Buzzfeed Tasty’s Instagram Feed, it’s been living in my head rent-free, so I knew I had to veganize it ASAP. I mean … tell me what sounds better than chewy ramen noodles doused with Korean corn cheese?! (hint: literally NOTHING).

Fast forward, and here I am sharing my version of Korean-Inspired Vegan Corn Cheese Ramen (that’s a mouthful) 😉 The recipe that Buzzfeed posted calls for the flavor packets included in the ramen noodles, but many aren’t vegan-friendly, so I decided to ditch ’em altogether and come up with my own sauce! Of course, I wanted it to be just as easy as making instant ramen, so all you have to do is throw it all into a pan and mix it with broth like you’d typically do anyway.
