Okay, I know the words pumpkin and ramen don’t exactly seem like they go together, but I promise you this pumpkin Ramen with Tofu Katsu is DELICIOUS! It’s got everything we love about ramen – rich broth and slurpy noodles – with the addition of cozy fall ingredients like pumpkin and nutmeg. I wouldn’t believe it myself if I didn’t try it, but the flavors just work! And they happen to work really, really well!

Korean-Inspired Vegan Corn Cheese ramen

Ever since I saw this video on Buzzfeed Tasty’s Instagram Feed, it’s been living in my head rent-free, so I knew I had to veganize it ASAP. I mean … tell me what sounds better than chewy ramen noodles doused with Korean corn cheese?! (hint: literally NOTHING).

Fast forward, and here I am sharing my version of Korean-Inspired Vegan Corn Cheese Ramen (that’s a mouthful) 😉 The recipe that Buzzfeed posted calls for the flavor packets included in the ramen noodles, but many aren’t vegan-friendly, so I decided to ditch ’em altogether and come up with my own sauce! Of course, I wanted it to be just as easy as making instant ramen, so all you have to do is throw it all into a pan and mix it with broth like you’d typically do anyway.

Vegan Birria Ramen

This vegan Birria Ramen is an easy and delicious mashup of two of my favorite foods. Meaty oyster mushrooms are shredded and marinated, then cooked to crispy perfection. Serve atop chewy ramen noodles immersed in rich consomé broth, and topped with vegan cheese, onion, cilantro and lime for a truly addicting, slurpable bowl of goodness!

 Bonus:  If you make my Birria Tacos, just make extra ‘meat’, add a couple more cups of broth to the leftover consomé, and you’ll have Vegan Birria Ramen for the next couple of days!

Meet your new favorite ramen recipe : Spicy Peanut Tempeh Ramen. Consider this the more sophisticated, healthier version of your childhood favorite. It’s simple, quick, budget-friendly, and SO delicious … the only thing missing? That weird flavor packet and a list of ingredients no one can pronounce.

Ok, no shade to Instant Ramen. It’s delicious and quick and so nostalgic. I can say with full confidence that I’ve definitely eaten my fair share of those .20¢ packets … especially coming home from the bars at 2 AM drunk af or stoned outta my mind with nothing but a box full of soy sauce flavored ramen noodles in the pantry to satisfy my insatiable munchies.

But we’re older and more refined now. And while I still get the munchies at 2 AM (c’mon, you know you do, too) my palate deserves better, and your’s does too. Insert my 30-minute Spicy Peanut Tempeh Ramen here. It’s literally everything we love about Instant Ramen, but elevated.
