Vegan ceviche – easy, delicious vegan ceviche loaded with young coconut meat, tomatoes, cucumber, cilantro, onions and jalapeños, and marinated in fresh lime juice and zesty seasonings. The young coconut meat is a wonderful substitution for white fish! This quick and easy dish is perfect for hot summer days!

It’s a classic favorite … and for good reason! My Pea Pesto Bruschetta combines classic tomato bruschetta with bright and vibrant pea pesto. The combination makes for a perfect, refreshing summer meal!

Tomatoes are in peak season, there’s virtually no cooking or utensils required, and only the simplest and freshest ingredients are used to make this perfect meal. I don’t know about you guys, but growing up, Valentine’s Day was my favorite.

The hardest decisions I made as a child were probably when Valentine’s came around and I had to pick what kind of cards and candies I wanted to pass out that year. The struggle was too real. While the style of my cards changed yearly, one thing always remained the same…

Conversation heart candies. I made sure my mom got me a bag of them every. single. year. 

Now, I know they’re pretty disgusting, but something about those little colorful hearts with cute sayings on them made me extremely happy and as an adult, I still find them pretty fuckin’ adorable.

Vegan Kale and Artichoke Dip

I love dips!!! My favorite dip of all time used to be spinach and artichoke dip, but now that I’m super vegan and all, I doctored it up a bit by making vegan kale and artichoke dip. 

If you give me a loaf of bread or bag of chips with some dip, I’ll die one happy girl.

Since Super Bowl is right around the corner, we figured we’d get one more recipe up. After all, there’s no better party snack than a good, reliable dip.
