Vegan Kale and Artichoke Dip

I love dips!!! My favorite dip of all time used to be spinach and artichoke dip, but now that I’m super vegan and all, I doctored it up a bit by making vegan kale and artichoke dip. 

If you give me a loaf of bread or bag of chips with some dip, I’ll die one happy girl.

Since Super Bowl is right around the corner, we figured we’d get one more recipe up. After all, there’s no better party snack than a good, reliable dip. Not to mention, our vegan kale and artichoke dip is super easy to make and is sure to be a crowd pleaser. We made it for ‘Friendsgiving’ this past year and everyone loved it!

Ingredients

  • 2 TBS vegan butter
  • 1 red bell pepper, diced
  • 5 cloves garlic, minced
  • 4 cups kale, roughly chopped
  • 3/4 cup vegan cheddar shreds
  • 1 – 14 oz can artichoke hearts, drained and chopped
  • 8 oz vegan cream cheese
  • 1/2 cup vegan sour cream
  • 1 cup vegan parmesan
  • 1/2 cup vegan mayo
  • 1 TBS slap ya mama
  • 1/2 cup chopped green onion, for garnish
  • Pita chips, bread, or veggies for serving

Instructions
  1. Preheat oven to 375 degree F
  2. In a 12" cast iron skillet, add vegan butter on medium heat.
  3. Add red bell pepper and cook for about 4-5 minutes. Add garlic and sauté until garlic becomes fragrant, about 2-3 minutes.
  4. Add kale, cheddar shreds, artichoke hearts, cream cheese, sour cream, ½ cup vegan parmesan cheese, mayonnaise, and Slap Ya Mama, mixing to thoroughly combine all the ingredients
  5. Cook until cheese is slightly melted and kale is slightly wilted, about 10 minutes, making sure to mix often.
  6. Place the cast iron in the oven and bake uncovered, for 30 minutes
  7. Garnish with green onion and serve with pita chips or bread.
  8. Serve hot or chilled.
  9. ENJOY!!!

    This is an appetizer favorite! Our non vegan relatives keep requesting this recipe for hosted holidays. I’ve tried it with kale as well as subbing in spinach and have loved it both ways!
