If you ask me, summer isn’t REALLY summer without a good potato salad … and my vegan Antipasto Potato Salad checks all the boxes for the perfect BBQ side dish! It’s creamy, tangy, and holds the perfect crunch from the peppers and fresh veggies. You’ll never look at potato salad the same again!

I always say the best recipes on the blog are one’s that were never meant to be here in the first place. You see, this was actually supposed to be a pasta salad recipe, but as I was rounding up all the ingredients to make this dish, I dropped the box of pasta all over my floor – and before I could pick them up to use them anyway (because I shamelessly would’ve), all 3 of my dogs rushed in the kitchen and ate the noods. Luckily, I had a whole bag of red potatoes … and the rest is pretty much history!

Vegan Filipino Chick’n Adobo … AKA your new favorite dish. Seriously, this isn’t considered  the National Dish of the Philippines for no reason. Tender vegan chicken, slow-cooked savory sauce, and pops of heat from whole peppercorns are served over rice the most effortless, yet delicious meal!

We all have those few meals that will always have a lasting impression on us. You know – those meals that transport us right back to a certain place and time as soon as we taste them – and Chicken Adobo, a meal my mom would make religiously for my sisters and I, is one of those dishes for me.

Being born in the Philippines, Adobo was a dish that was made often by my Lola (grandmother), who then passed on the recipe to my mom and aunt, who later passed on the recipe to me. I remember the house filling with the distinct smell if vinegar, soy sauce, and peppercorns when my mom would make adobo … and I would be so happy. It was the first dish I remember I truly craved. There is something so magical about the way the bold and intense flavors of this Vegan Chick’n Adobo harmonize together. This Vegan Chick’n Adobo is a great excuse to step out of your comfort zone and:

A. Try a vegan dish that’s not traditionally vegan

B. Step out of you comfort zone and try adobo if you haven’t already … it is SO DAMN GOOD!

Tender lasagna noodles are stuffed with vegan mozzarella cheese & creamy homemade tofu ricotta, coated in Italian bread crumbs and vegan parmesan, then fried to golden, crispy perfection. Serve each taco with fresh onions, cilantro, and lime … and of course, a side of the most delicious and savory consommé. This Mexican dish comes together easily, and is so delicious! Bonus : the consommé is great as leftovers! Serve with enchiladas, or on top of nachos to completely take your Mexican-inspired dishes to a whole new level!

Vegan Cheez-Its. Thanks to your handy dandy food processor, these cheesy crackers – loaded with two types of vegan cheese, and all the salty goodness – are just as easy to prepare as they are to devour.

I don’t know about ya’ll, but this shelter in place order has me cookin’ up the craziest stuff. I’ve already conquered Banana Bread and the viral Dalgona Coffee (of course I made mine a Drunk Dalgona), so I figured I’d have my hand at one of my favorite childhood snacks … the Cheez-It. With all the sweet quarantine recipes circling the internet, I needed something savory in my life. I figured since Vegan Cheez-Its are kinda hard to come by, I’d just make my own. And that’s how these delicious little babies were born. They’re salty, cheesy, crispy, and 100% snack-worthy. Be warned, though. These Vegan Cheez-Its are so damn good, they’re downright addictive, so you may as well just double the batch.

My wife and I have never been ones to celebrate Valentine’s Day. All of our favorite restaurants and bars are extremely crowded, it seems as if everything is overpriced (I tried buying my weekly bouquet of flowers from the grocery store this week and they were DOUBLE the price!), and I honestly just think it’s a silly consumerist holiday designed to make people feel bad. That being said, any excuse to stay in with a bottle or two of wine and some good food is as good as any.
