Super creamy tortellini and vegetable soup that’s packed with vegetables, brightened with pesto & fresh lemon juice, and ready in just 30 minutes?! You’re not dreaming … this bowl of perfection is real.

In case you haven’t noticed, I really, really love soup. Aside from the fact that soup is simple and versatile, it’s also a great dish for packing in a shit ton of vegetables. I don’t know about you guys, but after all the comfort food and cookies I eat during the Holidays, I’m usually craving lots of vegetables around this time of year.

By now, it’s no surprise that I love making different versions of chili (if you haven’t tried my vegan chorizo and pumpkin chili yet … WHAT ARE YOU WAITING FOR?! It’s award-winning!). With winter in full effect and Christmas right around the corner, I figured there’s no better time to share this easy white chili. It’s such a fun twist on classic chili! The flavors are so fresh and vibrant – I’m absolutely positive that a big bowl (or two) is sure to brighten up even the darkest of these cold, winter days. The best part is that it’s made in just one pot for easy clean up!

I don’t know about you guys, but I honestly believe that pot pie is, like, the epitome of comfort food. It’s just so good. Since we’ve all seen our fair share of chicken pot pies, I wanted to switch things up a bit. Instead of chicken, I thought to myself … “Why don’t I make broccoli cheddar pot pie? But instead of pie crust or phyllo dough, why don’t I use BISCUITS?!” Fast forward and here I am sharing this epic recipe with you. The best part? The days are getting shorter (seriously, though, it feels like it’s midnight at 6 o’clock, wtf daylight savings), and The Holidays are steadily creeping up. You need a soup in your rolodex of soup recipes that is comforting and simple. Something that isn’t too laborious in the kitchen, but instead kind of calming and meditative – you know, a recipe that you can just vibe out to with a glass of wine and your favorite playlist. A recipe that makes you feel good to eat it. Makes you feel good to share it. A recipe that warms you up from the inside, out.

Loaded with pumpkin spice & everything nice (literally), and topped with velvety vegan sour cream, red onions, seasoned pumpkin seeds, and fresh herbs … my Vegan Chorizo & Pumpkin Chili will blow that basic Chili right outta the water.

Easy, Comforting Soup You Didn’t Even Know You Needed Until Now.

Ok, I know what you’re thinking. Chorizo? Pumpkin? Chili?! I thought the same thing, too until I tried it and let me tell you … this might be the best chili I’ve ever had. And that’s saying a lot, because as you all know, I am a soup connoisseur. From Vegan Albondigas to Chick’n & Dumpling Soup, you know I love my fair share of soups! Initially, I didn’t think Chorizo and Pumpkin would pair well with chili, but something about these combination of flavors (along with a few other ingredients) just hits different, if ya know what I mean?! All I’m sayin’ is, don’t knock it til you try it.

Hello, Friends!!!

It has been way too long since I’ve posted a recipe to the blog, but as promised, we are back to our regular weekly postings, and I am so excited to finish this year off with all the recipes you’ve been asking for!

First up, my version of vegan flautas ahogadas. Ya’ll have been patiently waiting for this and I am so excited to finally be posting it!

As many of you know, my wife Ashlee and I live in a city that is deeply rooted in Hispanic culture and cuisine, so this recipe is especially dear to us. Hey there!

We’re back with another vegan Hamburger Helper recipe! I mean, you guys didn’t think I would stop at the Cheeseburger Mac , did you?!

Herbed Quinoa & Chickpea Stuffed Tomatoes with Romesco

Fun Fact : I absolutely love tomatoes.

They’re so versatile and bright! And the best part? There are so many varieties and different ways to prepare tomatoes.

You can use them in creamy sauces or thick gravies. You can blend them, saute them, blister them, fry them, and even stuff them with herby quinoa and chickpeas – which is what we’re doing today!

This recipe is the perfect spring and summer recipe! I love the combination of the cooked quinoa with the fresh tomatoes. And the romesco is so darn good, I slather that stuff on literally everything! I always double the recipe because it’s so tasty!
