Vegan Shepherd’s Pie

Do you guys celebrate St. Patrick’s Day? Neither Ashlee or myself are of Irish descent, but we celebrate every year mainly for the food. In the past, before switching to a vegan diet, we would go all out. Corned beef and cabbage, bangers and mash, Guiness beef stew, and my personal favorite…Shepherd’s Pie.

Ashlee and I don’t generally like casseroles, but there’s something so satisfying and comforting about Shepherd’s Pie. Maybe it’s the rich, meaty stew-like filling or the fluffy mashed potato topping. Or both combined. To say I love this dish is an understatment.

Since St. Patrick’s Day is tomorrow, I figured there’s no better time to veganize this famous dish.

Grab a Guiness and let’s get to making some vegan shepherd’s pie, shall we?!

Vegan Chikn Chipotle Pasta

In the past – just a few weeks ago, to be exact – if you had told me that chipotles would make a great sauce for pasta, I would have laughed in your face.

Chipotles? And Pasta? Like, together? No, thank you.

To be honest, I would have never even thought of this epic combination. I credit a local restaurant here in town that serves up a similar dish as a lunch special every now and then. Unfortunately…well, now that I think about it, fortunately, the restaurant’s version isn’t vegan and that’s how our vegan chipotle pasta was born! As soon I saw it coming out of the kitchen, I knew I had to make a similar version. And as soon as I tasted it, I knew I had to share with all of you! Our vegan chipotle pasta is sooo damn good.

Vegan Scallops with Truffle Pea Puree and Crispy Vegan Bacon Bits

Vegan Butternut Squash Soup with Fried Sage Croutons

Happy January, friends!!! I hope everyone had a wonderful and safe Holiday season!

I don’t know about you guys, but I am going through some serious PCD (post Christmas depression). My entire immediate family was able to spend The Holidays together for the first time in years, so going back to “real life” after everyone left kinda sucked, but I am super excited to see what this new year has in store for us!

Besides ending the year with the people we love the most, we also ended 2017 with a vegan pop-up dinner at the same location we had our very first pop-up! It was the best pop-up we’ve had! Looking back, I still can’t believe how smooth it went.

Anyway, the first dish we served at our Holiday inspired pop up was vegan butternut squash soup with fried sage croutons and it was a huge hit! I figured since all of our guests loved it, you guys will too.

I can’t believe it’s been nearly a month since I posted a damn recipe!!!

Isn’t it crazy how fast time flies when we’re older? I miss the days when it seemed like forever for Christmas to come. Counting the days off my advent calendar was torturous! Now, The Holidays come and go with the blink of an eye. Honestly, how is Christmas less than three weeks away?!

Cauliflower Buffalo & Ranch Tacos with Celery Slaw (Vegan)

Crazy busy – since we did back to back days – but still AMAZING. We live in a town that doesn’t offer many vegan options when eating out, so we were extremely happy and honored to have sold out both days!
