Vegan Beef and Broccoli Noodles

If ‘Beef’ and Broccoli is your go-to when ordering takeout, then you’re going to LOVE these Vegan Beef and Broccoli Noodles! Chewy Chow Mein noodles are tossed in the most delicious savory sauce with stir fried broccoli and tender, marinated ‘beef’ strips, making for a meal of slurpable goodness!

Vegan Beef and Broccoli Noodles

According to Made with Lau, Beef and Broccoli is said to have originated from the Chinese dish called “Gai Lan Chao Niu Rou”, also known as Chinese Broccoli Fried Beef. Because early Chinese immigrants could not find Gai Lan – the Chinese variation of broccoli in the US – the broccoli that we know today became an easy substitute, and is now used the widely noted dish that we know as Beef and Broccoli. It’s believed that the first versions of the dish were prepared by Chinese immigrants who had settled in San Francisco sometime after the 1920’s when broccoli was introduced by immigrants from Italy.

While beef and broccoli is widely popular in the US, it’s highly unlikely you’ll find it on menus in China – this dish is American Chinese, much like Crab Rangoon and the Chinese Chicken Salad. But just because this is a westernized recipe, doesn’t mean it isn’t delicious! In fact, Beef and Broccoli is a beloved American Takeout Favorite for a reason!

Vegan Dynamite Lumpia

This vegan dynamite lumpia is a variation of lumpia made with green chilies that are stuffed with a ground meat filling and cheese. The chilies are then wrapped in a lumpia wrapper with the stem exposed (so they look like cute lil dynamites), then fried until golden, crispy, and melty. It’s got all the savory, crunchy goodness of traditional Lumpia Shanghai, but kicked up a notch with the addition of slightly spicy chilies and 2 typed of creamy cheese – kinda like lumpia and jalapeño poppers met and had a baby.

Ya’ll, I have been ob-sessed with stuffed peppers lately – and the combination of zesty salsa verde, slightly sweet/slightly spicy poblano peppers, rice, roasted corn, cheese and seasoned chick’n is seriously unmatched. Not to mention, this recipe is easy, making it for perfect weeknight meal. Did I mention it’s also freezer friendly? Ya know, for those nights you can’t be bothered to cook, but need a home-cooked meal.

To make it even easier, you could most definitely purchase store-bought salsa verde, but I recommend making it homemade a few days ahead of time! It super easy, I promise 😌

I love enchiladas. I particularly love that there are so many variations of them – some more complex than others, some that are simple, some that are kinda fancy with roasted chilies and homemade sauce, some with red sauce, and some with green, some with chicken, some with beef, and some filled with  veggies and beans – I even love the enchiladas that have olives dolloped right on top. Have you had those?! My wife’s mom used to make ’em like that and funny enough, when I lived in Louisiana, that’s how they always came when I ordered them at any Tex-Mex restaurant. Up until I moved to California, I assumed all enchiladas had olives, and to this day, I still enjoy them on the side 😂  It might sound atrocious to some, but it’s good! Definitely not authentic, but delicious nonetheless.

My vegan ground beef enchiladas are kind of a mashup of the variations of Enchiladas I’ve enjoyed throughout my life. They’re simple, with just a cheesy vegan ground beef filling, but the seasoning really takes it over the top! And the sauce is homemade, with the rehydrated chilies adding a nice complexity in flavor. Yes, I add flour to my enchilada sauce because I really enjoy its gravy-like consistency!

Ya see what I mean … they’re kinda Tex-Mex, but with my own little spin on it 🙂

If you love kimchi fried rice, then you’re going to love this Cheesy Gochujang Skillet Fried Rice! It’s crispy on the outside, cheesy on the inside, and packed with an umami-bomb of flavor thanks to the gochujang and kimchi!

I got the idea for this Korean-inspired skillet fried rice after stumbling upon a YouTube video from Paik’s Cuisine for Kimchi Bap, or Kimchi Fried Rice. Paik’s version, made wildly popular with the addition of cheese, kimchi, and a handful of other ingredients, was featured on on Season 2 of the South Korean travel-reality show, Kang’s Kitchen.  Similar to Paik’s Kimchi Bap, my Cheesy Gochujang Skillet Fried Rice is seasoned, then cooked with cheese for a delicious twist on a beloved favorite!
