My wife, Ashlee graduated from culinary school several years before we adopted a plant based diet. There, she mastered the art of cooking really good Mexican food. You name it and she can make it from scratch. It’s a talent I am extremely jealous of, but I’m learning along the way, and I’d like to think I can make some great Mexican Inspired dishes as well.
Among some of her amazing dishes, her menudo is my favorite.

I know, I know…cauliflower wings have been “a thing” for quite some time now, but I’m barely jumping on the bandwagon.

Many of you probably don’t know this, but I spent many years living in Louisiana. Although I’ve spent most of my adult years living in California, I consider the Bayou state my home away from home and it’ll always have a special place in my heart.

I have something to admit.
I don’t particularly love Thanksgiving food. I mean, it’s alright, but if you ask me, there’s a reason why people only prepare it once a year. Don’t get me wrong, pumpkin spice is nice, but a girl can only have so much!
Tacos, on the other hand, I will never get tired of. In honor of stuffing and cranberry sauce being retired until next Thanksgiving, we decided to celebrate with these fried avocado tacos!

There’s something about Caesar Salads that I just absolutely love.
Especially when the lettuce is grilled.
You get the char from grilling it, but it’s still fresh and cold when you cut into it. Plus, it looks fancy as fuck. Serve these grilled vegan Caesar salads at any dinner party and you’ll be the star of the show.
