If you would’ve told me 6 years ago that I’d be able to enjoy hearty, meaty, comforting beef stew as a vegan, I would’ve laughed in your face. But here I am – not only enjoying it – but sharing the recipe with all of you to enjoy, too! Honestly, a big bowl of this cozy stew is the perfect way to ring in the Fall season.

Vegan ground sausage is simmered in a rich tomato sauce with hearty potatoes and vegetables until tender – make sure to serve over white rice for the ultimate comfort meal!

Vegan Filipino Picadillo

This vegan Giniling, also known as Filipino Picadillo, is the ultimate comfort food! It’s rich and savory, with the perfect balance of spicy, sweet, and tangy.

Picadillo comes from the Spanish word picar, meaning to mince or chop. It is a traditional dish in many Latin American countries and the Philippines. In the Philippines, picadillo is commonly made with ground beef or pork, potatoes, onions, and garlic, and cooked in a rich tomato sauce. Depending  on the region, different ingredients such as raisins, carrots, and olives are added. It can be either soupy or more dry. Usually, the drier version is called giniling.

Growing up, we always had the ingredients for giniling on hand – and there was always a pot of rice in the rice cooker – so this dish was prepared often as it was easy, minimal, and fairly quick to make.

I have so many fond memories of this dish and I’m so happy I’m still able to enjoy it vegan! Grab a drink and let’s get to cooking the best vegan giniling!

Happy first day of Fall! It’s ✨officially✨ the start of my Soup Season Series, and we’re kicking it off with the highly requested Zuppa Toscana.

This soup was made popular by Olive Garden, and is one of the most well-known items on their menu! Their version (and the one this recipe is based off of) is made with Italian sausage, crushed red peppers, diced onion, garlic, chicken broth, heavy cream, potatoes, and kale. It’s richer than the original, which is typically made with a lot more vegetables and water, instead of cream — basically far from any Zuppa Toscana you’d probably see in Tuscany. That said, because “Zuppa Toscana” is such a broad term, it’s hard to find its exact origins, and I’d bet that ingredients varied by region or what was available seasonally.

Vegan Sweet and Sour Tofu

This sweet and sour tofu is inspired by one of my favorite Chinese takeout dishes, Sweet and Sour Chicken. Sweet and sour dishes, sauces, and cooking methods have a long history in China. One of the earliest recordings of sweet and sour comes from《烧尾宴食单, a menu of the food served in Tang Dynasty festivals written in 708. It included many sweet and sour dishes and recorded that they were invented by Chancellor Wei Juyuan under Emperor Zhongzong of Tang when he hosted the Emperor at his house; one of them is the iconic Chinese dish sweet and sour spare ribs.

Cantonese sweet and sour sauce is the direct ancestor of the sauce of the same name in the West, and was originally developed for sweet and sour pork. The late renowned chef from Hong Kong, Leung King, included the following as his sweet and sour source sauce recipe: white rice vinegar, salt, Chinese brown candy, ketchup, Worcestershire sauce, and dark soy sauce.

Vegan Filipino Beefsteak

Growing up, Bistek Tagalog, or Filipino Beefsteak was one of my favorite dishes! In my opinion, it’s very similar to Chick’n Adobo – it’s savory from the soy sauce, with a zesty kick from the fresh citrus (usually calamansi) juice. It’s so simple, but somehow so complex. Not only is it delicious, but the memories behind this dish are quite special … I mean, it’s basically my entire childhood!
