Southwestern Egg Rolls (Chili’s Copycat)

These Vegan Southwestern Egg Rolls are inspired by the beloved appetizer at Chili’s – crispy (air fried OR deep fried) egg roll wrappers are loaded with seasoned chick’n, colorful veggies, and tons of melty vegan cheese – making for the perfect fusion appetizer that everyone is sure to love!

These vegan Southwestern Egg Rolls are a part of my Veganized Restaurant Remake Series, where I take popular restaurant recipes and veganize them!

Growing up, we ate out at chain restaurants quite a bit – and while I don’t necessarily miss the subpar food that’s served at most chain restaurants, I do miss the nostalgia and memories associated with going to them. There’s almost nothing like going to happy hour and getting a smorgasbord of half-priced apps and drinks at any of these restaurants 😌

Dynamite Lumpia (Dinamita)

If you’re looking for a fun and tasty snack, this Dynamite Lumpia (Dinamita) checks all the boxes! Green chilis are stuffed with a classic lumpia Shanghai filling, vegan cream cheese and cheddar shreds, then wrapped in lumpia wrappers and fried until golden, crispy, and melty! Talk about the perfect combination of salty, savory, creamy, crunchy and spicy!

Vegan Dynamite Lumpia

This vegan dynamite lumpia is a variation of lumpia made with green chilies that are stuffed with a ground meat filling and cheese. The chilies are then wrapped in a lumpia wrapper with the stem exposed (so they look like cute lil dynamites), then fried until golden, crispy, and melty. It’s got all the savory, crunchy goodness of traditional Lumpia Shanghai, but kicked up a notch with the addition of slightly spicy chilies and 2 typed of creamy cheese – kinda like lumpia and jalapeño poppers met and had a baby.

Vegan Baked Buffalo Chick’n Egg Rolls

All of the tangy, zesty, spicy flavors of Buffalo wings – but neatly wrapped in egg rolls! These Vegan Baked Buffalo Chick’n Egg rolls are so crispy, you’d never know they weren’t fried!

Remarkably easy to make, try these once and you’ll be converted for life!

Super cheesy, extra crispy and insanely easy baked buffalo chick’n egg rolls

Ok, first of all … I was today years old when I found out that Buffalo Wings actually got their name from Buffalo, New York, not buffalo the animal. Apparently, the buffalo wing was reportedly invented in the early 60’s at a bar in Buffalo, New York. Traditionally, they were served hot alongside celery sticks, carrot sticks, and either blue cheese or ranch dressing.

While my egg rolls are definitely fusion food at its finest, they’re still reminiscent of Buffalo Wings – without all the messiness! We’re taking all the classic flavors of the beloved bar food, folding them neatly in egg roll wrappers and baking them to crispy perfection for the most delicious snack!
