Vegan Chikn Chipotle Pasta

In the past – just a few weeks ago, to be exact – if you had told me that chipotles would make a great sauce for pasta, I would have laughed in your face.

Chipotles? And Pasta? Like, together? No, thank you.

To be honest, I would have never even thought of this epic combination. I credit a local restaurant here in town that serves up a similar dish as a lunch special every now and then. Unfortunately…well, now that I think about it, fortunately, the restaurant’s version isn’t vegan and that’s how our vegan chipotle pasta was born! As soon I saw it coming out of the kitchen, I knew I had to make a similar version. And as soon as I tasted it, I knew I had to share with all of you! Our vegan chipotle pasta is sooo damn good.

Are you guys ‘Team Sweet’ or ‘Team Savory’ for breakfast? Usually, I’m Team Savory. I’ll pick tofu scramble and soyrizo over pancakes any day. 

Lately, though, I’ve had a glarly sweet tooth and this vegan French Toast has been a Sunday morning ritual.

I know what you’re thinking, and this vegan French Toast is not lacking without an egg batter. Chickpea flour takes the place of the egg in this recipe and we promise, you’ll never taste the difference! This recipe is the perfect weekend brunch recipe!

Cauliflower Buffalo & Ranch Tacos with Celery Slaw (Vegan)

Ok, first thing’s first. I apologize I didn’t post a recipe last week, but Ashlee and I have busy little bees lately! If you follow us on Instagram, then you probably saw we hosted our very first Pop Up Eats a couple weeks ago! It was seriously amazing! Crazy busy – since we did back to back days – but still AMAZING. We live in a town that doesn’t offer many vegan options when eating out, so we were extremely happy and honored to have sold out both days! Spreading the word on vegan cooking and a vegan lifestyle is my absolute passion. For everyone who bought tickets, THANK YOU! We cannot wait to host our next Pop Up Eats in a few weeks! Nacho Average Hot Dogs (Vegan)
