Southwestern Egg Rolls (Chili’s Copycat)

June 17, 2022 By Ashley Leave a Comment

These vegan Southwestern Egg Rolls are a part of my Veganized Restaurant Remake Series, where I take popular restaurant recipes and veganize them!

Growing up, we ate out at chain restaurants quite a bit – and while I don’t necessarily miss the subpar food that’s served at most chain restaurants, I do miss the nostalgia and memories associated with going to them. There’s almost nothing like going to happy hour and getting a smorgasbord of half-priced apps and drinks at any of these restaurants 😌

June 3, 2022 By Ashley Leave a Comment

This Chick’n Caesar Pasta Salad is a fun twist on the typical Caesar and pasta salads, combining the best of both worlds! Loaded with creamy dressing, seasoned vegan chick’n pieces, and peppery arugula – then topped with homemade lemon-garlic breadcrumbs – leaving you with a pasta salad that’s full of texture and bursting with flavor in every bite! Serve as a side dish  or enjoy it for lunch or dinner! It’s the perfect summer recipe!

This vegan Chick’n Caesar Pasta Salad truly is the best off both worlds! If you know me, then you know I’m obsessed with Caesar salads. If there’s a vegan Caesar salad on any menu, at any restaurant, chances are I’m ordering it. It’s also no secret that I love pasta. And the two together are seriously magical. It was one night while I was eating dinner – a Caesar salad as my starter and a bowl of pasta as my entree – that I had the brilliant idea to marry the two. And the rest is history.

Now I know I’m not the first to invent a Chicken Caesar Pasta Salad, but honestly, the thought never occurred to me until that night just a couple months ago. So here’s my vegan version, which is perfect for all your summer gatherings, by the way! The homemade breadcrumbs really take it over the top, so don’t skip ’em!

Vegan Sisig

February 15, 2022 By Ashley Leave a Comment

This vegan sisig is my tasty take on the wildly popular Filipinx drinking snack! Dried snow fungus mushrooms are rehydrated and marinated, transforming them into crispy vegan ‘pork’ — then they’re sautéed with vegan sausage and an aromatic blend of onions peppers, chilis, & garlic, and cooked until crisped around the edges. Just like its traditional counterpart, this vegan sisig is rich and savory, with subtle notes of heat and acidity! The perfect bite paired with your favorite beer!

Vegan Sisig

It’s been awhile since I’ve been back to the Philippines (damn you, Covid!), but last time my wife and I were there (it’s been so long, it was before we were even vegan 😭), we spent the entire month island hopping and trying different variations of each region’s Sisig. To say we were obsessed is an understatement.

Since then, we’ve made many versions of our own vegan Sisig – some with mushrooms or tofu, or a mixture of both, but this version is my absolute favorite! The snow mushrooms provide the perfect gelatinous texture that you’d otherwise get from the different cuts of pork, while the vegan sausage crisps up impeccably! Eating this reminds me of drinking Red Horse and swimming into the late hours of the night while snacking on Sisig with my family and friends in the Philippines, and I’m immediately transported to my favorite place in the world with some of my favorite memories 🥲

Grab a drink and let’s get to cookin’ the best vegan Sisig!

This ultra creamy Vegan Spinach Artichoke Dip is forever a crowd-pleaser! Rich and cheesy, with a pop of zesty lemon and a touch of heat from chili flakes, just one bite will have you downright addicted! And the best part? It’s just as delicious served cold or at room temperature as it is hot and bubbly right outta the oven!

spinach artichoke dip: a tried and true appetizer that is perfect for any occasion

If you ask me, no get-together is truly complete without a really good food spread. And no really good food spread is truly complete without a really good dip. And what’s more tried and true than spinach artichoke dip?!

Sure, we can sit here and debate whether it should be served hot or cold, in a bread bowl or with a side of chips, but honestly … that’s the beauty of it, right? It’s got a range of options and variety. And with the addition of fresh spinach, zesty lemon, and roasted red peppers, you could almost say it’s ✨luxurious✨.

While I think this vegan spinach artichoke dip is best served hot and bubbly right outta the oven (be careful not to burn your mouth!), I’ve had confirmation from several taste-testers that it’s also delicious served at room temperature or even chilled!
