With bold flavors of ginger and garlic, and a kick of spice and fresh lemon zest, you’ll find yourself craving this recipe whenever you’re in the mood for something warm and cozy.

Since it’s Filipino History Month here in the US, I decided to kick it off with one of my favorite Filipino recipes! Arroz Caldo, also known as lugaw, is the ultimate comfort food. It’s hearty and cozy and warms you from the inside out – kinda like a hug in a bowl. What I love most about arroz caldo is it’s simplicity. This dish is no-frills, but don’t let that fool you because it packs A LOT of flavor!

Vegan Filipino Spaghetti

Filipino spaghetti is a Filipino twist on classic Italian spaghetti. Sweet and savory meat sauce is tossed with spaghetti and topped with cheddar cheese, making for a delicious and creamy pasta dish that is truly unlike any other! Typically served during holidays and at birthday parties, this dish is beloved by much of the Philippines!

Have you ever tried Filipino Spaghetti?

It’s a thing in the Philippines – served during the holidays, at birthday parties, and sold at all the fast food chains – including McDonald’s! Growing up in a Filipino household, I didn’t even know what real spaghetti was. I was always under the impression spaghetti was supposed to be sweet. I remember the first time I had non-filipino spaghetti, I was so confused. Where were the hot dogs? Why wasn’t it sweet? No cheddar cheese?!!!!?! To this day, I still prefer Filipino spaghetti to classic Italian spaghetti, and even when I cook spaghetti that’s more traditional,  I can’t help but add just a little bit of sugar to remind me of home 🙂

Unlike its original Italian counterpart, Filipino spaghetti is sweet, loaded with a meaty, sugary hotdog spaghetti sauce, then topped with cheddar cheese so it’s super creamy. It’s unique and unlike any pasta I’ve ever had! If you’re a sucker for sweet and savory dishes, you have to give Filipino Spaghetti a try!

Vegan Filipino Chick’n Adobo

Vegan Filipino Chick’n Adobo … AKA your new favorite dish. Seriously, this isn’t considered  the National Dish of the Philippines for no reason. Tender vegan chicken, slow-cooked savory sauce, and pops of heat from whole peppercorns are served over rice the most effortless, yet delicious meal!

We all have those few meals that will always have a lasting impression on us. You know – those meals that transport us right back to a certain place and time as soon as we taste them – and Chicken Adobo, a meal my mom would make religiously for my sisters and I, is one of those dishes for me.

Being born in the Philippines, Adobo was a dish that was made often by my Lola (grandmother), who then passed on the recipe to my mom and aunt, who later passed on the recipe to me. I remember the house filling with the distinct smell if vinegar, soy sauce, and peppercorns when my mom would make adobo … and I would be so happy. It was the first dish I remember I truly craved. There is something so magical about the way the bold and intense flavors of this Vegan Chick’n Adobo harmonize together. This Vegan Chick’n Adobo is a great excuse to step out of your comfort zone and:

A. Try a vegan dish that’s not traditionally vegan

B. Step out of you comfort zone and try adobo if you haven’t already … it is SO DAMN GOOD!
